3 lbs Bako Sweet® organic sweet potatoes, peeled and cut into
1" thick slices
6 tbsp coconut butter, melted
1 tsp pumpkin pie spice
¼ cup apple cider
¼ cup maple syrup
½ cup walnuts, chopped

1 Preheat oven to 425° F. Coat a baking sheet with cooking spray.
2 Place peeled and cut sweet potatoes in a large bowl.
3 Mix melted coconut butter and pumpkin pie spice in a small bowl. Pour the butter mixture over the sweet potatoes and toss until evenly coated.
4 Add sweet potato rounds to the baking sheet in a single layer.
5 Bake for a total of 40 minutes, flipping once halfway through.
6 Mix the apple cider, maple syrup, and walnuts in a small bowl. Drizzle over the sweet potatoes and return to the oven for another 5 minutes. Serve and enjoy!
