12 oz 4Earth Farms™ Organic Asparagus
Premade frozen pie crust of your choice
1 tsp extra-virgin olive oil
1 onion, thinly sliced
1 clove garlic, minced
½ cup Asiago cheese, grated
4 large eggs
1 cup 2% milk
1 tbsp Dijon mustard
1 tsp fresh thyme, chopped
½ tsp kosher salt
⅛ tsp black pepper
Prep Time: 1 hr
Cook Time: 40 mins

1 Pre-heat oven to 375º F.
2 Press premade dough into a 9" pie dish, cover with parchment and bake as directed.
3 While crust is baking, heat olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally until translucent, about 5 minutes. Add asparagus and cook until tender, about 5 more minutes. Stir in the garlic and cook for 1 minute. Remove from heat and slide the vegetables into the baked crust. Top with the grated cheese.
4 In a large mixing bowl, whisk eggs, milk, Dijon mustard, herbs, salt, and pepper. Pour the egg mixture into the crust. Stop ¼" from the top.
5 Bake the quiche for 30 minutes or until the edges are set. Remove the quiche from the oven, and cool for 15 minutes before serving. Enjoy!
