Red Sun Farms™ Bell Peppers ?!


‐ Vegetarian Stuffed Mushrooms ‐

1 Red Sun Farms Red Bell Pepper,
finely diced

1 Red Sun Farms Yellow Bell Pepper,
finely diced

4 Portobello mushrooms

4 large white Button mushrooms

1 small onion, finely diced

½ cup panko bread crumbs

½ cup grated Parmesan cheese

¼ cup olive oil

¼ cup balsamic glaze or balsamic vinegar

¼ cup finely chopped chives

Salt and pepper

 

Prep Time: 30 mins

Cook Time: 20 mins

Servings: 4


1 Preheat oven (or barbecue) to 350° F.

2 Clean and remove stems from mushrooms. Lightly oil outside of mushrooms, and place on a baking sheet.

3 Mix diced bell peppers and onions with panko bread crumbs, cheese, salt, and pepper.

4 Stuff mixture into each mushroom and drizzle with olive oil.

5 Bake for 20 minutes. Top with chives and balsamic glaze and serve. Enjoy!
