WTF Do I Do With
Mountain View Fruit Sales Apricots ?!


‐ Almond Apricot Cake ‐

6 Mountain View Apricots, washed and cut into small pieces

3 eggs

1¼ cups sugar

1¾ cups all-purpose flour

2½ tsp baking powder

¼ cup butter, softened

¼ cup plain Greek yogurt

1 tsp vanilla extract

½ tsp almond extract

Powdered sugar for dusting 

 

Prep Time: 15 mins

Cook Time: 60 mins

Servings: 12

 


1 Preheat oven to 350° F. Grease a bundt cake pan by spraying with oil or butter.

2 Place the sugar, yogurt, and eggs in a large bowl and beat with a mixer until light and fluffy.

3 Mix the flour with the baking powder, then add to the egg/butter/yogurt/sugar mixture a little at a time along with the softened butter. Continue to mix until completely blended.

4 Add the apricots to the cake mixture along with the vanilla and almond extract. Stir until evenly combined.

5 Put the batter into the prepared bundt cake pan.

6 Bake for 50–60 minutes, testing with a toothpick or skewer to make sure cake is done in the middle before removing from the oven. Allow it to cool for about 15 minutes, then remove from the pan.

7 Sprinkle powdered sugar on top just before serving. Enjoy!
