1 cup Shuman Farms Sweet Onions, sliced
6–8 cups salad mix
1½–2 cups Butternut squash, diced, roasted, and cooled
½–1 cup ready-to-eat beets, sliced
½ cup celery, diced
½–1 cup fennel, sliced and roasted
½–1 cup feta cheese
Squeeze of lemon or your favorite dressing
Prep Time: 15 mins
Cook Time: 30–40 mins
Servings: 4
1 Roast Butternut squash and fennel for 30–40 minutes.
2 Set aside and let cool.
3 Mix everything together in a large bowl.
4 Top with a squeeze of lemon or your favorite dressing. Enjoy!
