1 large Peri & Sons Farms® Yellow Onion, thinly sliced
1 tbsp olive oil or butter
4 large eggs
2 tbsp milk or cream
Salt and pepper, to taste
2 large flour tortillas
1 cup shredded cheese (Cheddar, Monterey Jack, or your favorite blend)
Optional add-ins: crumbled bacon, diced ham, cooked sausage, or sautéed veggies

1 Heat olive oil or butter in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15–20 minutes or until golden brown and caramelized. Reduce the heat if they start to brown too quickly. Remove the onions from the skillet and set aside.
2 Whisk the eggs, milk, salt, and pepper in a bowl. Pour the mixture into the same skillet and cook over medium-low heat, stirring gently, until just set. Remove from heat.
3 To assemble the quesadilla, place one tortilla in a clean skillet over medium heat. Sprinkle half of the cheese over the tortilla, followed by scrambled eggs, caramelized onions, and any optional add-ins. Top with the remaining cheese and the second tortilla.
4 Cook for 2–3 minutes on each side, pressing gently with a spatula, until the tortilla is golden and crispy and the cheese is melted.
5 Transfer to a cutting board, slice into wedges, and serve warm. Enjoy with salsa, guacamole, or sour cream for dipping!
