Nature’s Bounty Baby Gold Potatoes ?!

2 lb Nature’s Bounty Baby Gold potatoes, washed and cut into 1" cubes

2 tbsp olive oil

1 tsp ground cumin

1 tsp paprika (or smoked paprika for extra flavor)

1 tsp garlic powder

1 tsp chili powder

½ tsp onion powder

½ tsp ground black pepper

½ tsp salt (adjust to taste)

¼ tsp cayenne pepper (optional for more heat)

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Crumbled cotija cheese (optional)

Cook Time: 40 mins

1 Preheat oven to 425° F.

2 Place cubed gold potatoes in a large bowl.

3 Season potatoes by drizzling olive oil over them, ensuring they are evenly coated. Add cumin, paprika, garlic powder, chili powder, onion powder, black pepper, salt, and cayenne pepper. Toss potatoes until fully covered with spice mixture.

4 Spread seasoned potatoes in a single layer on a baking sheet. Roast in preheated oven for about 25–30 minutes, flipping halfway through, until they are crispy outside and tender inside.

5 Remove potatoes from oven, squeeze fresh lime juice over them, and garnish with chopped cilantro. For an extra flavor boost, sprinkle with crumbled cotija cheese.

6 Serve and enjoy these flavorful Mexican roasted potatoes as a side dish to your favorite Mexican meal or on their own!
