⅓ cup of Red Sun Farms™ Sweet Bell Peppers (tri-colored), diced
8 Red Sun Farms Grape Tomatoes, quartered
1 Red Sun Farms Mini Cucumber, diced
1¼ cup dry orzo pasta
½ cup crumbled feta
¼ cup red onion, diced
3 tbsp fresh parsley, chopped
3 tbsp fresh basil, chopped
⅓ cup olive oil
3 tbsp fresh lemon juice
1 garlic clove, minced
Salt and pepper (to taste)

1 Cook the orzo pasta according to the package instructions. Drain and rinse it under cold water to cool. In a mixing bowl, combine the cooked and cooled orzo with crumbled feta, diced sweet peppers, quartered grape tomatoes, diced mini cucumber, diced red onion, chopped parsley, and chopped basil.
2 For the dressing, combine lemon juice, minced garlic, salt, and pepper in a medium bowl. Slowly whisk in the olive oil until the dressing thickens slightly.
3 Pour the prepared dressing over the salad ingredients. Mix everything well to coat evenly with the dressing. Enjoy!
