1 LIV Organic spaghetti squash, halved and seeded
1 lb ground beef
14.5 oz can Italian-style diced tomatoes
1 small onion, chopped
2 cloves garlic, minced
Salt and pepper, to taste
For garnish: Basil, oregano, Parmesan cheese

1 Preheat oven to 400° F. Place squash on an oiled baking sheet, cut-side down. Bake squash for about 40 min, or until tender. Remove from oven and let cool.
2 Lightly oil skillet. Stir ground beef. Add onion and garlic. After the meat, onion, and garlic are cooked, add Italian-style diced tomatoes. Reduce heat to low and stir. Add salt and pepper to taste.
3 Scrape insides of squash into strands with a fork and plate. Top with meat sauce. Garnish with basil, oregano, and grated Parmesan cheese.
