1 cup Shuman Farms Sweet Onion, diced
5 fresh jalapeños, chopped (remove seeds for less heat)
8 oz breakfast sausage
1 cup pepper jack cheese, shredded
1 cup Cheddar cheese, shredded
8 oz cream cheese, softened
¾ cup Parmesan cheese, shredded
1 cup sour cream
¼ cup Panko bread crumbs for topping

1Preheat oven to 375º F.
2Spray a cast iron pan (or one that can go into the oven) with olive oil spray. You can also use ½ tbsp of olive oil instead.
3Heat pan over medium heat. Add diced onions and cook for 1–2 minutes. Add diced jalapeños and cook for another 2–3 minutes. Add sausage, cooking until brown throughout. Add pepper jack and Cheddar cheeses. Stir. Mix in cream cheese before adding Parmesan cheese. Stir. Add sour cream and mix well.
4Place in the oven and bake for 15 minutes.
5Carefully remove from oven. Sprinkle on Panko bread crumbs if desired.
6Place back in oven for an additional 5 minutes or until breadcrumbs are golden brown.
7Serve with your favorite crackers, tortillas chips, or fresh veggies for dipping. Enjoy!
