2 oranges, sliced
2 watermelon radishes, thinly sliced
1 fennel bulb, thinly sliced
¼ cup pistachios
Herby Citrus Vinaigrette
¼ cup extra virgin olive oil
2 tbsp white wine vinegar
1 tbsp honey
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
Salt and pepper to taste

1 Slice the oranges, watermelon radishes, and fennel bulb into thin slices. Shell the pistachios if not already shelled, and roughly chop.
2 In a large salad bowl, combine the Baby Red Butter + Arugula blend, sliced oranges, watermelon radishes, sliced fennel, and shelled pistachios. Toss gently to combine all the ingredients evenly.
3 In a small bowl, whisk together the extra virgin olive oil, white wine vinegar, honey, Dijon mustard, fresh lemon juice, finely chopped parsley, and finely chopped chives until well combined. Season with salt and pepper to taste.
4 Drizzle the vinaigrette over the salad ingredients. Start with a small amount and add more according to your preference. Toss the salad gently to coat all the ingredients with the vinaigrette.
5 Transfer the salad to serving plates or bowls and serve immediately to enjoy as a refreshing and vibrant addition to any meal!
