‐ Green Bean Casserole with Fried Sweet Onions ‐

Fried Onion Topping

1 Shuman Farms RealSweet® Onion

All-purpose flour, seasoned to your liking

Buttermilk 

 

Casserole

1 Shuman Farms RealSweet® Onion, diced

1 lb fresh green beans, blanched

2 tbsp all-purpose flour

2 cups heavy cream

2 tbsp butter

1 cup shredded Parmesan cheese

2 cloves garlic, minced

1 tbsp chopped thyme

2 cups shredded Fontina cheese

2 cups shredded sharp Cheddar cheese

Salt and pepper, to taste

 

Prep Time: 30 min

Cook Time: 45 min

Servings: 8

 


1 To make the fried onion topping, cut 1 RealSweet Sweet Onion into slices. Soak slices in buttermilk and coat in seasoned flour. Fry to desired crispiness.

2 For the casserole, preheat oven to 350° F. Melt butter in sauté pan. Add diced onion, garlic, and thyme. Once the onions have started to sweat, add flour and heavy cream to make the roux. Cook until smooth. Season with salt and pepper. 

3 Once sauce thickens, add the Cheddar and Fontina cheeses. Cook for another 10 minutes to allow the flour flavor to cook out of the sauce.

Add sauce to blanched green beans, mix well, and transfer mixture to a baking dish that has been sprayed with non-stick cooking spray. Top with Parmesan cheese and bake in oven for 15 minutes, or until cheese is brown and bubbly.

5 Top casserole with fried sweet onions and enjoy!
