2 lb fresh asparagus
Good olive oil
Kosher salt, plus extra for sprinkling

1Preheat the oven to 400°F.
2Break off the tough ends of the asparagus.
3Place the asparagus on a baking sheet lined with parchment or foil.
4Drizzle with olive oil, then toss to coat the asparagus completely.
5Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.
6Roast the asparagus for 25 minutes, until tender but still crisp.
7Shave Parmesan cheese on top and top with toasted walnuts to taste.
