2 ripe Westfalia Fruit Avocados, cubed
¼ cup lemon juice
4 tsp lime juice
2 tbsp chopped fresh coriander
2 tbsp chopped fresh mint
1–2 small red chilis, seeded and finely chopped
2 spring onions, finely chopped
14 oz fresh, skinless white fish, like Sea Bass or Mahi Mahi, cut into ½" cubes
Coarse salt flakes and black pepper, to taste
Fresh lime wedges to serve

1 Mix the citrus juice, herbs, chilis, and spring onions in a glass or stainless-steel bowl. Allow to infuse for 15 minutes.
2 Add the fish, cover, and refrigerate for 30–60 minutes until fish no longer looks raw when broken open.
3 Mix in Westfalia Fruit Avocados.
4 Serve immediately with a pinch of salt and pepper and lime wedges. Enjoy!
Note: The marinade ‘cooks’ the fish—make sure to use the freshest fish possible, as no heat is applied.
