3 large Peri & Sons Farms® Organic Shallots
4 tbsp butter
1 tbsp garlic, minced
¼ cup milk
1½ lbs Yukon Gold potatoes
Salt and pepper, to taste

Cook Time: 20 mins
Servings: 4
1 Peel and place potatoes in a large saucepan.
2 Add cold water to cover the potatoes by at least 1 inch. Bring to a boil over medium heat.
3 Reduce heat and simmer for 15–20 minutes until tender. Do not overcook.
4 Meanwhile, slice shallots into rings. Over medium-low heat, add 2 tbsp of melted butter and the shallots. Cook until golden brown.
5 Reduce heat to low, add garlic, and stir for 1 minute. When potatoes are soft, drain and add back to the pot.
6 Add milk and remaining butter and mix until smooth. Stir in caramelized shallots and add salt and pepper to taste. Enjoy!
