2 DelFrescoPure® Heirloom Tomatoes, sliced ⅓" thick
6 slices pancetta
1 tbsp maple syrup
2 tbsp olive oil
¼ cup goat cheese
¼ cup basil, chiffonade
Salt and pepper

1 Place pancetta on a hot grill, brush with maple syrup and cook until pancetta starts to crisp. Remove from heat and set aside.
2 Place tomatoes in bowl and dress with olive oil, salt, and pepper.
3 Lay tomato on a plate, top with crumbled goat cheese, one slice of pancetta, and basil. Repeat the steps and finish with a balsamic reduction (optional). Enjoy!
