Vegetable Medley
1 cup reduced-sodium chicken broth
2 tbsp soy sauce
3 tsp corn starch
1 lb boneless, skinless chicken breast, cut into ¼" strips
1 tbsp vegetable oil
1 clove garlic, minced
Salt and pepper to taste
Steamed white rice
Prep Time: 15–20 min
Cook Time: 10–15 min
Servings: 4
1 In a small bowl, combine soy sauce, corn starch, and chicken broth. Mix thoroughly until smooth. Set aside.
2 Heat oil in a large skillet over medium heat, add chicken. Stir-fry until fully cooked. Remove chicken from pan. Set aside.
3 In the same pan, stir-fry the vegetables for about 5 minutes, or until tender. Add garlic, salt, and pepper, and cook for another minute.
4 Add the soy sauce mixture over the vegetables. Simmer until the sauce thickens. Return chicken to pan and toss to coat evenly.
5 Serve over rice and enjoy!
