1 small Peri & Sons Farms® Red Onion, sliced
16 oz pasta of your choosing (large elbow noodles pictured)
1 pint cherry or grape tomatoes, halved
8 oz Feta cheese
½ cup vinaigrette of your choosing
Prep Time: 10 mins
Chill Time: 2 hrs
Servings: 1 large bowl
1 Cook the pasta al dente according to package instructions.
2 Dice Feta cheese into ¼" cubes.
3 Add all ingredients to a large, non-reactive mixing bowl and fold gently to combine.
4 Cover and refrigerate for at least 2 hours before serving. Once refrigerated, this dish can be eaten for up to 3 days. Enjoy!
