24 oz Highline® Mini Bella Mushrooms, sliced
3 tbsp olive oil
2 shallots, peeled and quartered
2 cloves garlic, minced
2 sprigs thyme
½ cup Marsala wine
¼ cup chicken stock
2 tbsp butter
3 slices bread, toasted
Salt and pepper, to taste
Fresh parsley, for garnish

1 Heat olive oil in a large skillet over high heat. Add mushrooms, shallots, garlic, and thyme. Cook for 5 minutes, stirring occasionally.
2 Add wine and cook until it reduces by half; then, add chicken stock and cook for another 3 minutes.
3 Stir butter into the mushrooms and remove from heat. Season with salt and pepper.
4 Top slices of toast with the mushroom mixture and garnish with fresh parsley. Enjoy!
