1 cup Earthbound Farm Organic Wild Red Arugula
6 slices prosciutto
2 tsp olive oil
2 oz fresh mozzarella, torn into pieces
2–3 tbsp sun-dried tomatoes, chopped
Salt and pepper, to taste
Balsamic glaze, for drizzling

1 Lay slices of prosciutto down slightly overlapping, with the longer side vertical.
2 Evenly spread Earthbound Farm Organic Wild Red Arugula over the lower half of the prosciutto. Drizzle with olive oil.
3 Scatter fresh mozzarella over the arugula, then season with salt and pepper. Sprinkle chopped sun-dried tomatoes on top.
4 Wrap and slice into even pieces. Drizzle with balsamic glaze, serve, and enjoy!
