3 Bako Sweet® Sweet Potatoes, peeled and diced
1 tbsp olive oil
½ white onion, diced
2–3 large carrots, diced
1 red bell pepper, diced
3–4 cloves garlic, minced
1 lb ground beef
1 can (15 oz) fire-roasted tomatoes
1 can (4 oz) diced green chilis
1 can (15 oz) black beans
1 can (15 oz) cannellini beans
4–5 cups beef broth
1 tbsp chili powder
1 tsp cumin
1 tsp kosher salt
¼ tsp paprika
Black pepper, to taste
Pinch of cinnamon, (optional)
Prep Time: 10 mins
Cook Time: 40–50 mins

1 Heat oil in a large pot over medium heat.
2 Add onion, carrot, and bell pepper, and sauté for 5–7 mins until veggies soften.
3 Add a pinch of salt and pepper and the garlic. Stir for 30 seconds.
4 Add the ground beef and cook until no longer pink.
5 Add Bako Sweet® Sweet Potatoes, tomatoes, green chilis, beans, broth, and seasonings. Stir to combine.
6 Bring to a boil, then turn heat down to medium–low and cook uncovered for 30–40 minutes or until sweet potatoes are fork tender.
7 Taste and adjust seasonings as desired. When ready, serve with your favorite garnishes. Enjoy!
