Bruschetta
5–6 Mountain View Fruit Sales Apricots, sliced
1 loaf French bread or baguette
1 tbsp agave syrup or honey
Tajín®, for garnish
Baby arugula, for garnish
Lemon Honey Ricotta
1 (15 oz) container ricotta
2 tbsp honey
1 lemon, juice and zest
Pinch of salt
Prep Time: 15 mins
Cook Time: 10 mins
Servings: 5–6 slices
1 Caramelize the apricots by pouring agave syrup or honey in a nonstick pan and sauté apricots for about 10 minutes over medium heat.
2 While apricots are cooking, slice the bread into 1" thick slices and toast slightly.
3 Combine ricotta, honey, lemon juice and zest, and salt into a food processor or blender and blend until creamy.
4 Assemble by spreading ricotta mixture on each slice of bread. Add caramelized apricots and garnish with a dash of Tajín and baby arugula. Enjoy!
