1 lb tricolor carrots
Fresh dill or parsley, to taste

1 Preheat oven to 400° F.
2 Peel carrots and cut in half longways. Drizzle with olive oil and sprinkle with salt and pepper.
3 Arrange sliced Darling Clementines and Darling Lemons over the top and roast about 30 minutes, turning at the 20 minute mark, until caramelized and tender.
4 To serve, sprinkle with Darling Clementine zest and herbs like fresh dill or parsley.
