3 tbsp extra-virgin olive oil
2 tbsp balsamic vinegar
1 tbsp honey
⅛ tsp sea salt
⅛ tsp black pepper
Coarse salt for sprinkling
Parsley, diced, for garnish

1 Preheat oven to 400º F.
2 Grease a baking dish and set aside.
3 In a small bowl, combine olive oil, balsamic vinegar, honey, sea salt, and black pepper. Whisk until fully combined.
4 In a large bowl, combine carrots and honey mixture. Toss to coat evenly.
5 Place carrots into the baking dish. Roast for about 30–35 minutes or until tender.
6 Let cool for about 5 minutes. Sprinkle course salt and parsley for garnishing.
