WTF Do I Do With
Bee Sweet Citrus Royal Red Oranges ?!


‐ Chocolate Cupcakes with Royal Red Frosting ‐

Cupcake

1 cup sugar

1 cup flour, spooned and leveled

¼ cup + 2 tbsp cocoa

½ tsp espresso powder

1 tsp baking powder

¾ tsp baking soda

½ tsp salt

1 egg at room temperature

½ cup sour cream at room temperature, or buttermilk

¼ cup oil

1 tbsp vanilla

½ cup boiling water

 

Frosting

2 tbsp Bee Sweet Citrus Royal Red Orange juice

½ cup softened butter

8 oz cream cheese

3 cups powdered sugar

Pinch of salt

 

Prep Time: 10 mins

Cook Time: 15 mins

Servings: 12

 


1 Whisk together dry ingredients. Mix the egg, sour cream, oil, and vanilla in another bowl until combined, then pour the mixture into the dry ingredients. Pour in boiling water and mix. Stir and pour into the prepared muffin tin.

2 Bake at 350° F for 15–19 minutes. Allow to cool in the pan for about 5 minutes.

3 Once cooled completely, beat together butter and cream cheese with a hand mixer. Add in powdered sugar, then the juice and salt. Pipe onto cupcakes and enjoy!
